“Fonte di Foiano was founded in 1979 in the area of Bolgheri. It has since grown and specialised in the production of high quality Extra Virgin Olive Oil, exporting its product to approximately 30 countries with a current production of about 300 hectolitres. For us MORI-TEM has been a great partner, crucial to the company’s growth in these last 10 years that we have been using their plants, where innovation and continuous research have led to concrete and constant results over time. “It took two years to create the “Oleosalusistem” project headed by Azienda Agricola Buonamici di Fiesole and aided by the MORI -TEM oil plant machine manufacturing company. It took two years for the “Oleosalusistem” project to take off, a plan aimed at promoting collaboration between the worlds of production and science. The main objective was to “extract” the typically health-related elements of extra virgin olive oil. The commitment of Azienda Agricola Buonamici was the natural development of its tradition that has always been focused on organic products, with a high technological content, and these factors have always pointed to extra virgin olive oil. The "Oleosalusistem" project involved the “validation of protocols for the production of oils with a high nutritional content and reduced environmental impact”. To achieve the objective, an innovative plant prototype was developed by MORI- TEM implementing new crushing criteria to reduce the risk of oxidation of the product, based on the results of research previously conducted by LCM - Metropoli and the University of Florence.”

“The Mori and Mugelli families have been closely linked for many years now, through both the strong friendship that bonds them, as well as the work relationship. The first Mori-Tem mill at Torre Bianca dates back to 2005, mainly on the idea and wishes of Marco Mugelli. Over the years several machines in the mill have been replaced or modified to keep up with the new technologies and the mill opened up to new customers. In fifteen years of business many types of monocultivar olives have been processed and all of the variables that these types of machines can offer to achieve excellent products have been used.”
“Our company is not that old. It was founded in 2005 based on my passion for the olive tree and the oil of its fruits. We have now planted about seven thousand trees, plantations created to increasingly develop oil productions from monocultivar olives. Once we had the olives, it was necessary to get a plant to extract the precious oil. Our choice, after examining what was available on the market, narrowed down to the TEM mills. It has been a continuous crescendo of satisfaction, transitioning from the initial model of 2 quintals/hour to the current latest generation 5 quintals/hour with vacuum extraction. With the exception of a few accolades, the greatest satisfaction is tasting the amazing fragrances and polyphenol vapours during the extraction stage ... it adds years to my life!!:”
“Sono un ragazzo fortunato (I am a lucky man)..” as Jovanotti sang, and in a way I believe it applies to me too. Why? Because in 2005 I was chosen by Dr Marco Mugelli to work in an experimental and innovative MoriTem plant; essentially the forefather of all the models that they produced and continue to produce to the good fortune of many very high quality oil producers. Gaining experience on the experimental models helped me greatly in my professional training, since the olive oil sector is not part of my legacy or my family tradition. With my life partner Judyta, in 2013 we bought our Mori Tem 1000 plant for the oil that we produce with our label. As an oil expert, I work with olive oil producers in various areas of the world equipped with Mori TEM plants where I have been able to achieve brilliant results and very high quality oils. When oil producers need my consultation to produce high quality, they often have Mori-Tem plants and when I am away from home my olive mill La Ranocchiaia continues working just as well since Judyta has learned all the tricks of the trade.”
“At our company the first mill was installed at the beginning of the sixties, in the eighties, with the development of the first modern plants, the grinding mill was replaced with a continuous-cycle plant. From then to date, always pursuing greater performance and staying abreast of the technological evolution of extraction systems which in the last 15 years has been important and significant, four plants have been replaced. Since 2018, we have installed a Mori mill alongside the pre-existing line. We are fully satisfied with the very high performance, due not only to the exceptional technical features of the machines, but also and especially to the possibility of dialogue and on-going consultancy (often during the work) with the entire competent Mori team. "My adventure in the world of evo oil began with a irresistible call of the “forest”. Until the age of 45, I worked, and still work, in a different field; my father was the one who worked with olive trees and oil. Nevertheless your roots will always pull you back to the land where the tree once grew. After an oil tasting course, which radically changed my opinion of evo, I decided to start a mill. My professional past saved me from making mistakes, by reading qualified reviews on the internet and through tastings with various producers and machine dealers, I immediately knew that the TEM Oliomio mill was the plant for me. My meeting with Giorgio Mori, organised by my friend Antonio Villani, a company representative for Abruzzo, was decisive. As with many customers, I immediately became friends with Giorgio and his family. Since then, after repeated consultations with Giorgio, every year we proceed to update our plant, improving it every time, always with the aim of enhancing the evo. Over the years, we have transitioned from the first mill of 700 Kg/hour to 2000 Kg/hour on two lines and the results have been confirmed not only by us but also our customers who bring their olives to the mill, as they are increasingly included in guides and more frequently win national and international contests.”

The history of OlioCRU is now meshed with Tem, and I have no doubt it will continue this way. From a small family concern, gradually, almost through an imprinting of sorts of Giorgio Mori, with esteem and the common discovery of new techniques, with unlimited passion and curiosity, we are evolving, ensuring that we observe the coordinates provided to us by TEM for a high quality product, in this land of ours, that mainly expresses the classic fruits of hill or mountains. At this point, what is it that allows two companies such as OlioCRU and MORI TEM to be partners in a process that is not limited to buying by one party and selling by the other? Respect for company needs, extensive knowledge of the field and the materials, competence in both and last, but not least, great esteem that is not limited to the professional aspect, but that naturally goes beyond, in sharing and respecting the needs of the other partner, whether that is a person or a company.
“20 years have passed since our fist Mori mill. We have gone a long way since then, together. Oliomio, in 1999, was our first two-phase plant that radically changed our production chain, providing us with splendid polyphenol-rich oils, with the first depitter being added to it a few years later. I have fond memories of Gino Veronelli who, at the time, encouraged me to produce pulp-only oils as well. A worthy replacement was Sintesi, FR_250, a vertical vacuum temperature-controlled malaxer with which we made our first oils in a controlled-atmosphere. In 2019 the new plant, Sintesi 250, with vertical malaxer and decanter, equipped with auger 2.0, oxygen control and advanced temperature control: a gem that raises the quality standard of our phenol-rich oils.
"Scrivere della Mori-Tem per me significa parlare di persone che hanno accompagnato la mia crescita negli anni con consigli preziosi e confronti continui.
Dal 2003 si è instaurato un rapporto con la famiglia Mori che va oltre il rapporto cliente /azienda, ho incontrato persone che alla grande competenza tecnica e di conoscenza degli oli uniscono grandi qualità umane.
Sembrerà strano, ma in questa azienda meccanica si parla soprattutto di olio e di come utilizzare la tecnologia per diversificare gli oli prodotti; una sorta di personalizzazione degli oli.
Sta a noi decidere che “tipo” di olio produrre con le olive che abbiamo a disposizione.
A mio avviso, in questi anni, l'azienda ha raggiunto standard qualitativi straordinari. Fare un buon olio con queste macchine, dipende quasi esclusivamente da noi e dalla qualità delle nostre olive!
Ultima considerazione che rende unica questa azienda è la continua ricerca di tecnologie che portino a perfezionare il processo oliva-olio; unicità che consiste nel lavorare con rigore sull’assaggio degli oli, per verificare se le innovazioni tecnologiche progettate hanno effetti reali sul miglioramento della qualità degli oli prodotti.
