Flavour, the new olive crusher was designed specifically to increase the flavour of extra virgin olive oil.
The innovative system designed by the MORI TEM research and development department involves the gradual temperature control that does not generate thermal deltas of more than 5°C, both lower and higher.
FLAVOUR CRUSHER INNOVATION AND OPERATION
The system is equipped with a reactor positioned on the crusher which, in addition to controlling temperature, increases or decreases contact oxygen.
After leaf removal, the olives are transferred to the washer for washing in water containing ozone for the complete elimination of bacteria; this water is conditioned through a tube-in-tube heat exchanger.
The washed olives then go through a tunnel which, for cooling, does not generate a thermal delta of more than 5°C.
The olives conditioned at the perfect processing temperature then arrive at the crusher which is equipped with a reactor/conditioner that works on both oxygen and temperature, again at a delta of less than 5°C.
The crusher pump transfers the paste to the malaxer where a specific system with a plate heat exchanger keeps the temperature under control before transferring it to the decanter for extraction.
As described, the flavour crusher represents a substantial innovation in the olive milling stage entailing total control of the temperatures, from the washer to the malaxer, with gradual deltas before extraction.
The process can vary based on what cultivar is being processed, and is managed through the recipe on the PLC system and therefore automatically for each type of cultivar, once the ideal temperature and oxygen are identified.
